Pineapple Cabbage Salad

Makes 6 servings

Fresh and unique, this slaw salad uses unexpected ingredients to add sweetness and crunch. Pairs well with spicy dishes.


1/2 head, Koolheads™ Flathead Cabbage, thinly sliced
12 ounces (1 1/2 cups) fresh pineapple, diced
1/3 cup pine nuts, toasted
8-10 fresh basil leaves, chopped
4 tablespoons mayonnaise
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground black pepper


Slice the cabbage and put in a large mixing bowl. Add the rest of the ingredients. Carefully mix the salad, then taste and add more salt and pepper if desired.
